One of my favorite snacks is chips and salsa – actually, to be honest, I could probably do without the chips and just go for the salsa! In the past I’ve always preferred tomato or tomatillo-based salsas and never really paid much attention to other varieties – until recently. I was shopping at Whole Foods and came across a mango salsa that looked fantastic. I was particularly intrigued because it contained jalapenos and I love spicy food and thought this would be an interesting contrast to the sweetness of the mango. I’m so happy I bought the salsa – it was amazing and completely transformed my impression of non-tomato based salsas. This recipe is my attempt at recreating the delicious salsa that I purchased. I was pleased with the outcome and hope you are also!

Ingredients
- 2 mangoes, diced (1/4-inch)
- juice of 1 lime
- 1/4 cup minced red onion
- 1 – 2 tablespoons fresh, chopped cilantro
- 1 jalapeno pepper, seeded and minced (optional)
- salt, to taste
- freshly ground black pepper, to taste
Directions
In a medium bowl combine the mango, lime juice, onion, cilantro and jalapeno. Season with salt and pepper, to taste. Store in a covered container in the refrigerator for at least 30 minutes before serving.

I went through the recipe and the preparation of this salsa and I think that this is a simple recipe yet you will be satisfied on the outcome. I am imagining the fusion of the ingredient once they are mixed together, SWEET, SOUR, SALTY. Perfect!

I’m the same way when I eat chips and salsa; I put as much salsa as possible onto each chip. If I’ve got it, I sometimes just use celery in place of the chips. Yum!
